This dish is a tribute to a chapter of Chef Kim’s life, inspired by someone who introduced him to the world of plantain. In 2013, she shared her love for plantain, reminiscing about her grandmother’s tradition of grilling sweet bananas for family gatherings.
To honour this memory, Banana Textures was born—a medley of banana purée, grilled sweet bananas, and deep-fried plantain, topped with roasted almond cream and crushed almonds. The caramelized nuttiness of the bananas pairs perfectly with the creamy almond finish, making it a dish rooted in love and nostalgia.
